A “Eureka!” moment came when we were delivering to
one of our restaurants in New York City and saw in their kitchen a box of produce that had been shipped from the Midwest. I asked if I could take it home.
“Of course,” said the chef. “We’re throwing it out anyway.”
It felt like I had just robbed the bank and was about to get away with it.
