Well, it’s finally summer here in South Central Kentucky. Sunny, hot and humid – perfect growing conditions for this month’s chosen vegetable – okra.
Somehow, okra doesn’t get a star billing as some of our other summer vegetables do. Many people focus on what they consider its most negative quality – its texture. Those who are kind call it mucilaginous. Others, just slimy. But okra is an indispensable ingredient in Southern cuisine, and is loved by customers all over the country (and the world), not just the South.
