Sweet cornThere are several decent rules of thumb that will get you started picking sweet corn at the peak of its flavor, but the ultimate and most informed choice is in the hands of the harvester. I know that picking early in the morning, when the corn is in its coolest state, helps significantly to slow the conversion of those sugars back into starch.
