Organic GraphThe National Organic Program took effect in October 2002 and in the decade since, organic farminghas grown steadily. Organic fruit and vegetable consumption has seen the strongest growth, accounting for 12 percent of all U.S. fruit and vegetable sales last year. Organic dairy is the second-largest category, capturing nearly 6 percent of the total U.S. market for dairy products, according to the Organic Trade Association.
